Steak Fajitas with Onions and Peppers
Who doesn't love fajitas? Serve these with some pico de gallo and fresh guacamole, and you're in heaven.

- Combine lime juice, 1 teaspoon salt, and 2 tablespoons olive oil in a shallow dish. Add the steak and marinade at room temperature for 10 minutes, turning once.
- Pat steak dry, then rub with black pepper.
- Put a large skillet over medium high heat and add a little olive oil. Add steak and cook, turning once, under desired doneness (6-10 minutes for medium rare).
- Transfer the steak to a cutting board, then let stand at least 5 minutes.
- While the steak is resting, add the onion and peppers to the still hot pan. Season with salt and pepper, and cook until tender.
- When onion mixture is ready, toss with vinegar and 1/2 teaspoon salt, and serve with thin, diagonally sliced pieces of steak.
