Curried Sweet Potato Latkes
This recipe sounds so good, and it doesn't disappoint. I made these to serve with a brisket for a twist on a classic holiday pairing.

- Grate the sweet potatoes coarsely. In a separate bowl mix the cayenne pepper, curry powder, cumin, and salt and pepper.
- Add the eggs and sweet potatoes to the dry ingredients and mix.
- Heat 1/4 inch of frying fat in a frying pan and drop in the batter by tablespoons and flatten. Fry over medium-high heat several minutes on each side until golden. Drain on paper towels and serve.
